This course is part of the University of Minnesota Extension’s Serve It Up Safely™ program. It teaches how to follow food safety rules based on the Minnesota Food Code, current research, and industry best practices to help prevent the spread of foodborne illness in a food business.
The active managerial control (AMC) approach is a proactive way to manage food safety. It includes setting clear food-handling policies, training staff, watching how food is handled, and making sure safety standards are followed. Using this approach helps reduce food safety risks and supports a strong food safety culture.
In each module, you’ll learn about common food safety hazards, risky behaviors, and practical ways to apply the AMC approach in your establishment. The course also provides tips and resources for training your staff.
By the end of the course, you’ll be able to use the active managerial control approach to lower the risk of foodborne illness in your food business.
