Simply Good Eating for English Language Learners is an educational program designed to help English Language Learners plan healthy meals, understand and practice basic food safety, and stretch their food dollars when shopping.
Objectives
This program seeks to help English Language Learners and adults with low literacy change behaviors in 13 food preparation and consumption areas. For example, participants will learn to:
- Eat a variety of healthy foods every day, including at least 5 cups of fruits and vegetables.
- Cook and prepare foods in healthy ways for themselves and for young children.
- Store food properly and read labels to keep foods safe.
- Make informed decisions and save money when shopping for food.
Class sessions include a variety of activities to reinforce what participants learn in the program, as well as share their own knowledge, experience, and customs about food.
Space and time requirements
This program includes 13 class sessions ranging in length from 45 minutes to about 2.5 hours. Sessions can be adapted to meet the learning needs of participants, and within reason fit the space and time needs of the partnering agency. Sessions may include time for sampling or cooking foods.

Simply Good Eating for English Language Learners was developed by University of Minnesota Extension and draws on resources of the University Department of Food Science and Nutrition, the Minnesota Department of Human Services, the United States Department of Agriculture, and Minnesota counties and local agencies.
