While Extension educators are following stay-at-home orders, many are developing lessons they can bring to participants online now and in the future when in-person, hands-on education resumes.
April Smith, University of Minnesota Extension SNAP-Ed educator based at the Robert R. Jones Urban Research and Outreach-Engagement Center in Minneapolis, created this video to share an experiment on growing root vegetables from scraps. It can result in a small amount of additional healthy produce during this time when trips to grocery stores are few and far between, but it also provides a fun learning experiment for young people who are home right now.
